Show Us Your Life




It's show us what you are cooking right NOW at Kelly's Korner. I do not mind cooking. It's fun but when you have picky eats and food allergies thrown in it isn't all fun. Some nights I feel like a short order cook.

All 3 boys will eat sausage (like Hillshire sausage and sausage dogs) and sloppy joes. 2 like pizza and chicken nuggets. One likes jelly sandwiches and yogurt. One will eat tacos and ribs. I keep saying ONE day they will eat and dinner time will be fun. 





Michael and I eat this at least once a week. We love it!! I adapted it to what I had in my pantry and it was awesome. For the sauce I only use beef broth, soy sauce, garlic, ginger, red pepper flakes and cornstarch. We have had it with steak, chicken and just veggies. And we have had it with white rice and noodles. It's all good!! 

EASY BEEF AND BROCCOLI STIR FRY

INGREDIENTS
  • 1 tbsp olive oil
  • 1 lb flank steak, trimmed of fat and sliced thin against the grain
  • ½ cup low sodium soy sauce
  • 2 tbsp cornstarch
  • 3 cloves garlic, minced
  • 3 tbsp sherry
  • 3 tbsp honey
  • 1 tsp fresh ginger, minced
  • 2 tbsp sesame oil
  • 1 pinch red pepper flakes
  • 1 tbsp Sriracha sauce, or to taste
  • ½ cup beef broth (or chicken broth)
  • 1 head broccoli, cut into small florets
INSTRUCTIONS
  1. In a medium bowl, whisk together the soy sauce, cornstarch, garlic, sherry, honey, ginger, sesame oil, red pepper flakes, Sriracha sauce and beef broth. Set aside until ready to use.
  2. Heat the olive oil in a large skillet and cook the steak until it starts to brown, about 4 to 5 minutes. Add sauce and stir in with the steak, it should start to thicken immediately. Add broccoli and cook for an additional 2 minutes until broccoli is tender and sauce is thickened.
  3. Serve over rice or noodles.




Here's another I found on Pinterest. This sounded strange but it was oh so good!! 



CHICKEN BROCCOLI ALFREDO STUFFED SHELLS

Ingredients
  • 1 jar (16 oz) alfredo sauce
  • 2 cups cooked chicken, shredded
  • 2 cups cooked broccoli, chopped
  • 1 cup shredded cheddar (or mozzaerlla) cheese
  • ¼ cup shredded parmesan
  • 21 jumbo pasta shells, cooked
  • 1½ - 2 cups spaghetti sauce (optional, but I love the combination of alfredo with tomato sauce!)
  • Salt/Pepper to season (if needed)
Instructions
  1. Pre-heat oven to 350 degrees.
  2. In a large bowl, mix alfredo, chicken, broccoli, and cheeses.
  3. Spoon mixture into pasta shells.
  4. Grease 13 x 9 baking dish with butter or cooking spray.
  5. Evenly spread spaghetti sauce on bottom of baking dish.
  6. Arrange shells in baking pan.
  7. Cover with foil and bake 35 minutes until heated thru.
Notes
Remember that the noodles need to be cooked prior to stuffing. I usually like cooking them 1-2 minutes under what the package says, that way they will fully cook when baking in the oven!

This recipe can easily be altered to your liking. One easy filling addition -- chopped cooked bacon!





This is my favorite chocolate chip cookies! I've switched the vanilla pudding for chocolate pudding too. YUMMY!!


PUDDING COOKIES
The most delicious and soft cookies around!

INGREDIENTS
  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 (3.4 oz) package instant vanilla pudding
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2¼ cups flour
  • 1½ cups chocolate chips
INSTRUCTIONS
  1. Preheat oven to 350 degrees F.
  2. Stir together flour and baking soda and set aside.
  3. In a large bowl, cream butter and sugars together.
  4. Add in pudding package and beat until well blended.
  5. Add eggs and vanilla.
  6. Add flour mixture slowly until well incorporated.
  7. Add chocolate chips or whatever add-in you chose.
  8. Roll into 1" balls and place on greased baking sheet.
  9. Bake at 350 degrees F for 8-12 minutes.

Chewy Sugar Cookies Recipe

Sugar cookies make a favorite little cookie recipe for so many. Get this family-favorite recipe for chewy sugar cookies that everyone is sure to love.

Ingredients
  • 1 cup (2 sticks) butter, softened
  • 1½ cups granulated sugar
  • 1 egg
  • 2¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon Kosher salt
  • 1 teaspoon vanilla
  • ¼ cup granulated sugar for rolling cookies
Instructions
  1. Preheat oven to 350º F. Line cookie sheets with parchment paper or a nonstick baking mat.
  2. Cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add egg and mix until well-combined.
  3. Stir in flour, baking powder, salt, and vanilla.
  4. Scoop cookie dough by the tablespoon full and roll into a ball.
  5. Add granulated sugar to a large bowl for rolling cookie dough in before baking. Place each ball of cookie dough into the bowl of granulated sugar and roll to coat well. Place cookie dough onto baking sheet, spacing about 1½-inches to 2 inches apart. Lightly press each cookie down. Bake for 8 to 10 minutes or until lightly browned.
